Here’s What’s in Season in August

August is upon us, can you believe it? The good news is its prime growing season for North America which means we’ve got access to bushels of fresh fruits and veggies.

It’s time to start thinking back to school. For us Georgians the first day of school is tomorrow! There’s nothing better to put in your kid’s (or your own!) lunch box then in-season fruit and veggies.

Here’s what’s likely fresh and in season near you!

Veggie Pasta Marinara – Add a summer squash along with the zucchini for added yumminess.

Israeli Salad – Take advantage of summer’s juicy tomatoes and sweet bell peppers.

Strawberry Spinach Salad – I recently made this for a church event and it was a hit! I bet you’ll love it too.

Curried Chickpeas & Spinach – A quick and easy dish that’s mega flavorful.

Quinoa, Corn and Pea Salad – Make the classic corn and pea combo great by adding quinoa and warm spices. Swap out edamame for the peas if you prefer them!

Corn, Zucchini and Black Bean Tacos – A true EPP classic. If you haven’t tried them yet, now’s the time with both corn and zucchini being in season.

Cowboy Caviar – I also made this at the aforementioned church event and got a ton of requests for the recipe. Enjoy seasonal corn, tomatoes, bell pepper and black-eyed peas in this tasty dip that can also easily be turned into a salad.
