Vegan Baked Feta Pasta (from TikTok!)

Baked feta pasta was made famous on TikTok. I decided to veganize the recipe and fell in love!
Ingredients
15 cherry tomatoes
4 garlic cloves
6oz dairy-free feta crumbles (I used Follow Your Heart). You can also use a dairy-free feta block.
Heavy drizzle of olive oil (about 2 Tbsp)
1 Tbsp of It’s Seasoned Garlic and Herb
Generous pinch of pink sea salt
Crushed red pepper flake to taste
16oz pasta (I used penne rigate)
3-4 handfuls of baby arugula (you can also use baby spinach)
Instructions
Preheat your oven to 400F.
Put a large pot of well salted water on high heat for your pasta.
In a large casserole dish, add the feta, tomatoes and peeled garlic cloves. Drizzle olive oil over everything.
Add It’s Seasoned Garlic & Herb, red pepper flakes and pink sea salt.
Bake for about 20-25 minutes until the tomatoes are blistered and feta is soft and melty.
While the feta mixture is baking, cook your pasta to al-dente and drain.
Use a fork to mash the tomatoes and garlic into the melted feta. Mix in the baby arugula until it wilts.Taste and adjust seasoning as needed.
