Dairy-Free Pesto Sauce

It’s basil season! Just the excuse I need to make some bomb dairy-free pesto sauce. If you haven’t tried pesto, it is SO delicious not only on pasta but you can stir into rice, use it on pizza instead of traditional tomato sauce, add it to salad dressing and sandwiches…the possibilities are endless. I like to add it to pasta with arugula and tomatoes. Give it a try!


Ingredients

  • 2 cups packed fresh basil (remove any large stems)

  • 3 Tbsp walnuts

  • 3 large cloves of garlic

  • 4 Tbsp nutritional yeast

  • 1/2 tsp sea salt (or more if needed)

  • Big squeeze of lemon juice

  • 3-4 Tbsp avocado oil or olive oil

  • 4-5 Tbsp vegetable broth


Instructions

  1. Add basil, walnuts, garlic, nutritional yeast, sea salt and lemon juice to a food processor or blender. Pulse until a paste is formed.

  2. Slowly add in avocado oil as the food processor or blender is running. Scrape down the sides of the machine if necessary. Add vegetable broth 1 tablespoon at a time until you reach your desired consistency.

  3. Taste and adjust seasoning as needed.

Serve with pasta, on pizza and sandwiches or stirred into salad dressing, pasta salad or rice.
